1 Rib - Feeds 1-2 people

7 Ribs - Prime Rib Roast
Pre-Heat Oven to 325 degrees.
Place Fat side up on a deep Roasting pan with rack or in Roasting pan on top of a bed of cut onions, carrots, celery, so the roast sits 3-4 inches above the pan. Fill bottom of the roasting pan with water, do not let it get to meat level. This will serve as the base for the Jus (juice) or gravy.
Cover with foil and put in oven at 325 degrees for 15 minutes per pound the roast weighs(weight is on price sticker). Remove foil for last 20 minutes and raise oven temp to 400 degrees to crisp the top. (***you can reverse this process if you like, but the meat will be juicer if you do it at the end)
***If wanted Meduim Rare remove from oven when internal temp (use a thermometer) in thickest part of the roast reaches 125 degrees and let cool top of stove. (beef continues to cook while cooling)***
Well Done is 140 degrees when pulled from oven.
